Fried pork steaks with broccoli (for 4 persons)

Ingredients

  • 400 g Broccoli
  • 2 Shallots
  • 1 Garlic clove
  • 80 g Parmesan cheese
  • 5 Stem(s) Thyme
  • 1 egg (size M)
  • 4 Pork steaks (about 150 g each)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 Parsley leaves
  • 3 TABLESPOONS Oil
  • 250 g ribbon noodles (e.g. Fresine)
  • 350 ml Vegetable broth (instant)
  • 100 g Whipped cream
  • 7-10 Tbsp grated zest of 1 untreated lemon
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp Lemon slices

Directions

    Wash the broccoli and remove the florets from the stems. Peel the stems and chop them smaller if necessary. Peel and finely dice shallots and garlic. Grate the parmesan finely. Pluck the thyme leaves from the stalks. Mix parmesan and thyme on a flat plate.

    Whisk the egg in a deep plate. Season meat on both sides with salt and pepper. Turn the cutlets in the egg first, cover with 1 parsley leaf each and turn in the parmesan mixture. Heat oil in a pan and fry meat for about 5 minutes on each side. Take out and keep warm. Meanwhile cook the pasta in boiling salted water for about 8 minutes. 5 minutes before the end of the cooking time, add broccoli to the pasta water and bring to the boil. Sauté the shallots and garlic in the cooking fat. Deglaze with broth. Stir in cream and lemon peel. Bring sauce to the boil and season with salt, pepper and sugar. Let it boil down a little bit at medium heat. Drain pasta and broccoli, drain and mix with the sauce.
