Roast the grated coconut in a large pan without fat until golden brown, take it out and let it cool down. Peel bananas, cut them in half lengthwise. Heat half the butter in the pan. Fry 6 banana halves for about 2 minutes on each side.
Shortly before the end of the frying time, add 2 tablespoons honey and 1 tablespoon lime juice. Prepare the remaining bananas in the same way with the remaining butter, honey and lime juice.
Spread the bananas on four plates. Drizzle with honey stock and sprinkle with 1-2 tbsp. coconut flakes. Turn the ice cream scoops quickly one after the other in the remaining coconut flakes and distribute them on the plates.
