Peel garlic and dice finely. Wash the chives, dab dry and cut into small rolls. Mix garlic, chives and oil. Season with salt and pepper. Cut cheese into slices and pour garlic oil over them.
Marinate for about 30 minutes. Wash and drain the lettuce leaves. Peel onions and cut into rings. Wash the cucumber and cut into thin slices. Quarter flat bread and cut it horizontally.
Top with lettuce, cucumber, onions, olives and marinated sheep's cheese.
