Ingredients

  • 400 g Spaghetti
  • 7-10 Tbsp Salt
  • 500 g Broccoli
  • 100 g Sweet peas
  • 1/2 Chinese cabbage
  • 1 piece(s) (à ca. 3 cm) Ginger
  • 1 Garlic clove
  • 5 TABLESPOONS Soy sauce
  • 1/2 TEASPOON Sambal Oelek
  • 6 TABLESPOONS Oil (including 3 tablespoons sesame oil)
  • 4 Eggs

Directions

    Prepare the pasta in plenty of boiling salted water according to the instructions on the packet. Clean and wash the broccoli and divide into florets. Clean and wash the mangetouts. Clean, wash and cut Chinese cabbage into strips.

    For the seasoning sauce, peel the ginger and garlic and chop very finely. Mix both with soy sauce, sambal oelek and sesame oil.

    Heat 2 tablespoons of oil in a wok or large frying pan. Stir-fry the broccoli for about 4 minutes. Add the Chinese cabbage and mangetouts and fry for approx. 3 minutes. Drain the noodles and let them drain well. Mix with the sauce and the vegetables. Season to taste with salt and pepper.

    For the fried eggs, heat 1 tablespoon of oil in a frying pan and fry the eggs in it. Season with salt. Arrange noodles with 1 fried egg each.

    For the fast asia pan, various noodles are suitable. How about whole grain spaghetti? You won't notice them as such, because the soy sauce will turn the noodles brown. If you like it more authentic, take Asian mini noodles.
