Halve the avocado, remove the core and peel the fruit halves. Peel the garlic. Puree avocado and garlic with the hand mixer. Stir in crème fraiche. Season with lemon juice, salt and pepper.
Lightly roast sunflower seeds in a pan without fat. Sprinkle over the dip. Peel or clean and wash the vegetables. Cut into small pieces. Arrange on a plate with the dip.
