Fish pieces with apple-cucumber salsa

Ingredients

  • 1 Apple (approx. 180 g)
  • 100 g Cucumber
  • 1/2 bunch Mint
  • 7-10 Tbsp Juice of 1 lemon
  • 4 TABLESPOONS Olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 200 g Basmati Rice
  • 4 pieces of cod fillet (about 180 g each)

Directions

    Wash the apple, quarter it and cut out the core. Wash the cucumber. Cut apple and cucumber into small cubes. Wash mint, pluck leaves from the stalks and cut into fine strips.

    Mix apple, cucumber and mint with 2 tablespoons of lemon juice and olive oil each and season with salt and pepper. Put rice into 400 ml boiling salted water, bring to the boil, cover and simmer over low heat for about 12 minutes.

    Then let it swell for about 5 minutes without heat. In the meantime, wash the fish and cut it into 5 cm wide pieces, sprinkle with remaining lemon juice and season with salt and pepper. Heat the rest of the oil and fry the fish for 4-5 minutes, turning it until golden brown.

    Serve fish and rice with the apple-cucumber salsa.
