Shrimp skewers with mango chutney

Ingredients

Servings: 4
  • 1 small onion
  • 1 big ripe mango
  • 1/2 – 1 red chilli pepper
  • 3-4 Tbsp Oil
  • 3-4 Tbsp light balsamic vinegar
  • 1-2 TABLESPOONS Honey
  • 7-10 Tbsp salt and pepper
  • 24 (approx. 500 g; without head, with skin; fresh or frozen) Prawns
  • 3-4 Stem(s) Basil
  • 8 wooden skewers

Directions

    Peel onion and chop very finely. Peel the mango. Cut the flesh from the stone and also dice very finely. Cut the chilli lengthwise, remove the seeds, wash and finely chop.

    Heat 1 tablespoon of oil. Sauté onion and chilli in it. Steam mango cubes for about 2 minutes. Stir from time to time. Stir in vinegar and honey. Simmer for another 2-3 minutes. Season to taste with salt and pepper.

    Let the chutney cool down.

    Defrost frozen shrimp. Peel, gut and wash the shrimps and pat them dry well. Put 3 prawns on 1 skewer each.

    Heat 2-3 tablespoons of oil. Fry the prawn skewers in this oil for 3-4 minutes. Season with salt and pepper. Wash the basil and cut into strips except for a little bit. Stir into the chutney. Serve everything.

    Garnish with basil. Serve with fresh baguette.
