Clean, wash and chop the strawberries. Puree the strawberry pieces with a blender. Strain the strawberry puree through a sieve. Whip the cream until semi-stiff. Beat the egg white until stiff. Add sugar and continue beating for about 1 minute.
Alternately fold the strawberry puree and cream into the beaten egg white, do not stir. Pour the strawberry puree into a bowl and decorate with a halved strawberry.
