Separate eggs. Beat all egg yolks, sugar and vanilla sugar with the whisks of the hand mixer until frothy. Grate the zest of the lime and squeeze the juice. Stir both into the cream.
Soak, squeeze and dissolve the gelatine. Add to the cream while stirring constantly. Whip the egg whites and cream separately until stiff and fold in loosely. Pour the cream into glasses and chill.
Just before serving, decorate with a slice of lime, some lime zest and the Cigarettes russes.
