Ingredients

  • 1.5 kg white asparagus
  • 2 Turkey inner fillets (600-750 g)
  • 200 g mangetout or frozen peas
  • 7-10 Tbsp about 3 stems each of parsley and basil
  • 1 medium onion
  • 75 g Parmesan (piece)
  • 1 TABLESPOON + 50 g cold butter
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp salt and pepper
  • 100 g Whipped cream
  • 1 Bag "Preparation for Sauce Hollandaise"
  • 1-2 TEASPOONS Lemon juice
  • 2-3 TABLESPOONS Oil
  • 50 g Lean smoked ham in fine cubes

Directions

    Wash and peel the asparagus and cut off the woody ends. Boil the peelings and sections with about 1 1/2 l water and boil for 10-15 minutes. Drain and collect the stock.

    In the meantime wash the turkey fillets and pat them dry. Cut into about 12 pieces. Clean and wash the mangetouts. Wash the herbs, shake dry and cut into strips, except for some basil. Peel onion and chop finely.

    Finely grate the parmesan.

    Bring asparagus stock to the boil in a wide pot with 1 tbsp butter, 1/2 tsp sugar and 1 1/2 tbsp salt. Cover and cook the asparagus for 10-12 minutes, depending on their thickness.

    Lift out the asparagus, drain and place on an ovenproof dish. Measure 200 ml asparagus stock and put aside. Simmer the mangetouts in the remaining asparagus stock for about 3 minutes. Lift out, drain and place on the plate with the asparagus.

    Use the fund for other purposes.

    Mix cream, 200 ml asparagus stock and sauce powder in a pot and bring to the boil. Only add 50 g butter in pieces. Remove the sauce from the heat and stir in half the parmesan. Season to taste with pepper and lemon juice.

    Spread over the vegetables and sprinkle with the rest of Parmesan cheese. Place the plate on a baking tray and bake in the preheated oven (electric range: 225°C/circulating air: 200°C/gas: level 4) for 10-15 minutes.

    Fry turkey steaks in hot oil for 2-3 minutes on each side. Season with salt and pepper and place on the baking tray with the asparagus. Fry the onion and diced ham briefly in the hot frying fat, mix with the herbs and spread on the steaks.

    Garnish with the rest of the basil. Boiled potatoes taste good with it.
