Fillet of beef on apple slices with Tyrolean bacon straw, horseradish sauce and spinach gnocchi

Ingredients

  • 250 g Bread roll (from the previous day)
  • 200 ml Milk
  • 250 g deep-frozen leaf spinach
  • 4 Onions
  • 1 Garlic clove
  • 175 g soft butter
  • 40 g fresh horseradish
  • 5 Stem(s) Parsley
  • 2 TEASPOONS grainy mustard
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 Eggs (size M)
  • 4-5 Tbsp Flour
  • 7-10 Tbsp grated nutmeg
  • 50 g Tyrolean bacon; in thin slices
  • 3 large apples
  • 2 TABLESPOONS Lemon juice
  • 800 g Fillet of beef (middle piece)
  • 4 TABLESPOONS Oil
  • 1 TABLESPOON Sugar
  • 100 ml Balsamic vinegar
  • 75 g Whipped cream

Directions

    For the dumplings cut the rolls into small cubes. Warm the milk lukewarm and pour over the rolls. Leave to stand for about 30 minutes. Put spinach and 75 ml water in a pot. Cover and cook for about 8 minutes, stirring from time to time.

    Let it cool down. Peel onions and garlic. Cut 1 onion and garlic into fine cubes. Melt 25 g butter, fry onion and garlic in it, add to the rolls and put aside.

    For the seasoning butter, halve the remaining onions. Dice one onion half very finely. Cut the rest into strips and put aside. Peel and finely grate the horseradish. Wash parsley and shake dry.

    Pluck off leaves and chop finely. Put 100 g butter, onion, parsley, horseradish and mustard into a mixing bowl and puree to a smooth mixture with a chopping stick. Season the butter mixture with salt and pepper.

    Squeeze the spinach well, chop it coarsely. Add spinach, eggs and flour to the rolls. Season with salt, pepper and nutmeg, knead everything well together. If the mixture is too moist, knead in some more flour.

    Form dumplings from the mixture with 2 tablespoons. Cook in portions in plenty of boiling salted water for 6-8 minutes. Lift out with a skimmer and drain.

    Cut Tyrolean bacon into fine strips. Wash apples, grate dry and cut into thick slices, drizzle with lemon juice. Dab beef fillet dry and cut into 4 steaks/medallions.

    Heat 1 tablespoon of oil in a frying pan, fry the Tyrolean bacon in it until crispy, take it out and let it drain on kitchen paper. Fry the apple slices in the frying fat in portions, turning briefly, and place in an ovenproof dish.

    Melt 50 g butter in a large pan, fry the gnocchi in the hot butter. Heat 1 tablespoon of oil in another pan, fry the onion strips in it. Sprinkle with sugar and allow to caramelize slightly.

    Deglaze with vinegar, season with salt and pepper and simmer for about 5 minutes. Melt the seasoning butter in a small pot. Add cream and mix well with a blender. Let the fillet steaks rest for a short time.

    Arrange on plates with sauce, apple slices and dumplings. Spread onions and Tyrolean bacon on top. Serve immediately.
