Fig crown with meringue

Ingredients

Servings: 4
  • 50 g Amarettini biscuits
  • 1 TABLESPOON Butter
  • 8 fresh figs (about 50 g each)
  • 1 Protein
  • 7-10 Tbsp Salt
  • 2 heaped Tbsp Sugar

Directions

    Crumble Amarettini. Melt butter. Fry a good half of the Amarettini briefly in it. Pour into an ovenproof dish. Wash the figs and pat dry. Cut the round side flat. Cut figs into little crowns (see photo)

    Beat the egg whites and 1 pinch of salt until stiff, adding sugar. Fold in the rest of the Amarettini. Place the figs in the tin and press the tips apart. Put a blob of meringue on each one. Bake in a preheated oven (electric cooker: 200 °C/circulating air: 175 °C/gas: level 3) for 5-6 minutes until golden brown. Remove and serve immediately
