Farmhouse bread with two different spreads and cheese

Ingredients

  • 1 small apple (approx. 100 g)
  • 1 TABLESPOON Lemon juice
  • some stem(s) Thyme
  • 200 g smoked calf's liver sausage
  • 1-2 TABLESPOONS Calvados
  • 1-2 TABLESPOONS Whipped cream
  • 3 TABLESPOONS Roasted onions
  • 1 small onion
  • 1/2 bunch Chives
  • 100 g Radishes
  • 1 glass (53 ml; separation weight: 30 g) Capers
  • 200 g Pork sausage
  • 150 g Mountain cheese
  • 4 Figs
  • 10 discs (60 g each) farmhouse bread
  • 2-3 TABLESPOONS Fig Mustard

Directions

    Peel, quarter and core the apple. Cut into fine cubes and mix with lemon juice. Put something aside for garnishing. Wash the thyme, dab dry and put something aside for garnishing. Remove the rest of the leaves. Press the liverwurst out of the skin.

    Mix with Calvados and cream. Mix in apple, thyme and 2 tablespoons of fried onions. Pour into a bowl and sprinkle with apple and 1 tablespoon of onions. Garnish with thyme that has been set aside. Put it in a cold place. Peel and finely chop the onion. Wash the chives, dab dry and cut into rings. Wash and clean the radishes and cut them into sticks, drain the capers. Knead the onion, half of the chives and capers with the mince. Put the minced meat in a bowl and sprinkle with radishes, remaining capers and chives. Put it in a cold place.

Just before serving, wash figs and cut them into slices. Cut bread slices into thirds. Arrange cheese with fig mustard and figs on a plate. Serve bread with the cheese and the two spreads
