Farfalle with peas and spring onions

Ingredients

Servings: 4
  • 300 g Noodles (e.g. Farfalle)
  • 7-10 Tbsp Salt
  • 150 g Spring onions
  • 1-2 Garlic cloves
  • 2 stem(s) flat leaf parsley
  • 2 TABLESPOONS Butter
  • 300 g frozen peas
  • 5 TABLESPOONS Olive oil
  • 80 g Parma ham
  • 7-10 Tbsp Pepper
  • 50 g sliced parmesan cheese

Directions

    Prepare the pasta in salted water according to the instructions on the packet. In the meantime clean and wash spring onions. Cut some spring onions into pieces of about 10 cm length and halve lengthwise. Chop the rest roughly.

    Peel the garlic and press it through a garlic press. Wash parsley, dab dry, pluck leaves from the stalks and chop. Melt butter in a pan. Sauté the chopped onions and garlic in it.

    Add peas and 3 tablespoons of pasta water. Season with salt and cook for 10 minutes. Drain the noodles. Tear ham roughly into pieces. Heat 2 tablespoons of olive oil in a pan. Fry large pieces of spring onion and ham.

    Add parsley, 3 tablespoons of olive oil, ham and long spring onions to the peas. Season to taste with salt and pepper. Mix with the pasta and sprinkle with parmesan.
