Endive salad with egg & bacon

Ingredients

Servings: 4
  • 2 Potatoes (about 200 g)
  • 6-8 Eggs
  • 100 g smoked
  • 7-10 Tbsp streaky bacon
  • 7 TABLESPOONS Oil
  • 1 medium onion
  • 7-8 TABLESPOONS Vinegar
  • 2 TEASPOONS sugar, salt, pepper
  • 1 large head endive salad (Escarol)

Directions

    Wash the potatoes and boil in water for about 20 minutes. Boil eggs hard. Quench both, peel and let them cool down

    Finely dice the bacon and drain it crisply in 1 tbsp. hot oil. Peel onion and fry briefly. Deglaze with 150 ml water and vinegar and bring to the boil. Stir in 6 tbsp. oil and sugar. Season to taste with salt and pepper

    Drain the potatoes, mash them finely and

    Mix the marinade. Clean, wash and cut the salad into strips. Cut the eggs into slices. Mix the prepared ingredients loosely
