Select, wash and remove the stalks from the elderberries and drain well. Put the berries in a pot and mash them with a masher. Wash lemon, peel thinly and squeeze. Add lemon zest, juice and 1.5 litres of water to the berries and bring everything to the boil. Pour the juice through a stretched gauze cloth and let it drain. Measure the juice and add 1 kg sugar per litre of juice.
Bring everything to the boil once and skim. Stir the preserving aid into the hot juice. Pour the elderberry juice into prepared bottles. Close tightly. Results in approx. 2 litres of juice
