Elderberry curd cream with strawberries

Ingredients

  • 500 g Strawberries
  • 3 TABLESPOONS Sugar
  • 1 TABLESPOON Pistachios
  • 250 g Low-fat curd
  • 5 TABLESPOONS Elderflower syrup (bottle or homemade)
  • 7-10 Tbsp grated peel and juice of 1 organic lime
  • 400 g Fresh cream

Directions

    Wash, clean and chop the strawberries. Mix with 2 tablespoons of sugar. Chill for about 1 hour. Grind the pistachios finely.

    Stir curd, syrup, lime zest and juice until smooth. Whip the crème fraiche and 1 tbsp. sugar in a tall mixing bowl with the whisks of the mixer for 2-3 minutes. Fold into the quark. Divide the cream into small bowls.

    Add strawberries and sprinkle with pistachios.
