Watermelon-Lime Granita with ginger

Ingredients

  • 75 g Sugar
  • 1,5 kg (approx. 1 kg net) Watermelon
  • 1 piece(s) (approx. 20 g) Ginger
  • 4–5 Limes
  • 7-10 Tbsp Cling film

Directions

    Simmer sugar and 150 ml water in a saucepan while stirring until the sugar is completely dissolved. Remove from the heat and let it cool down.

    Cut the flesh of the watermelon from the skin and remove the seeds. Then cut into large pieces. Peel and roughly chop the ginger. Wash organic lime hot, rub dry and finely grate the skin.

    Squeeze all limes and measure 200 ml of juice. Finely puree melon, ginger, sugar water, lime peel and juice with a hand blender.

    Pour the melon puree into a flat dish (approx. 1.5 l capacity), cover with cling film and freeze. After approx. 1 hour, stir with a fork and freeze for at least 6 hours (preferably overnight).

    Allow Granita to thaw for 40-50 minutes (depending on room temperature). Carefully scrape off portions with a knife or tablespoon into rough splinters and serve immediately.
