Strawberry-lemon cold dish with snow dumplings

Ingredients

  • 1 Organic Lemon
  • 750 g Strawberries
  • 350 ml well chilled apple juice
  • 1 package Vanilla sugar
  • 2 fresh protein (Gr. M)
  • 7-10 Tbsp Salt
  • 4 TABLESPOONS Sugar
  • 2 TABLESPOONS Pistachio kernels

Directions

    For the cold peel, wash the lemon hot, dry it and peel it with a zest ripper in fine strips. Halve the lemon and squeeze out one half. Wash and clean the strawberries and chop them into small pieces of about 200 g.

    Puree the remaining strawberries with apple juice and vanilla sugar using a hand blender. Season to taste with lemon juice. Place the strawberry pieces in the cold dish, cover and chill for 20-30 minutes.

    For the snow dumplings, beat the egg white with the whisk of the mixer until stiff, adding 1 pinch of salt and the sugar.

    Bring approx. 1 l water to the boil in a wide saucepan. Take the pot off the stove. Form dumplings from the beaten egg white and let them slide into the water. Covered and let it stand in hot water for 4-6 minutes. Remove the dumplings with a skimmer and let them drain well.

    Coarsely chop the pistachios. Arrange cold dish and dumplings. Sprinkle with lemon peel and pistachios.
