Eischneenocken on strawberry mirror

Ingredients

  • 300 g Strawberries from Europe
  • 3 TABLESPOONS Agave syrup
  • 1 Organic Orange
  • 1 little Cinnamon
  • 5 Protein
  • 1 Vanilla pod
  • 75 g Icing sugar

Directions

    Wash the strawberries, remove the middle part and cut in half. Then add the agave syrup and some cinnamon together with the juice and the zests of half an organic orange. Finely puree everything with a hand blender.

    For the egg whites, finely sieve the icing sugar. Scrape out the pulp from a vanilla pod and add. In a second bowl, start beating the egg white of five eggs with a hand mixer. When the egg whites are frothy, add the icing sugar bit by bit and beat everything until stiff.

    Fill a pot with a finger's breadth of water and bring it to a boil on the stove. Add small stains of the beaten egg white mixture to the pot and let it simmer for 3 minutes with the lid closed.

    In the meantime, put 2-3 tablespoons of the strawberry mirror on a plate and place the flakes on top. Bon appetit!

    Expert tip: A caramel grid gives the recipe the right crunch! To do this, simply caramelise 150g of sugar with 3 tbsp of water in a pot, dip a tablespoon into the liquid caramel and use it to paint four small grids on a piece of baking paper. Then let it cool down.
