Grease a small casserole dish. Whisk eggs and milk with a fork. Season with salt and nutmeg. Pour into the casserole dish. Place the casserole dish in a wide flat pot. Pour on enough hot water so that about 2/3 of the baking dish is in the water.
Bring the water to the boil and let the egg milk simmer for 20-30 minutes at low heat until the mixture is firm. Turn out the egg mixture and dice it if necessary.
