Easter pretzel from yeast dough with plum-marzipan filling

Ingredients

  • 350 g Flour
  • 1 pinch Salt
  • 1 package Dry yeast
  • 75 g Sugar
  • 1 package Vanillin sugar
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 1 egg (size M)
  • 50 g Butter or margarine
  • 250 ml Milk
  • 100 g Soft plums
  • 200 g Marzipan raw mass
  • 50 g Icing sugar
  • 1 Egg Yolk
  • 1 TABLESPOON Whipped cream
  • 2 TABLESPOONS Sugar crystals
  • baking paper

Directions

    Mix flour, salt and dried yeast. Add sugar, vanilla sugar, lemon zest and egg. Melt the fat, add milk and warm up lukewarm. Add to the flour mixture and knead to a smooth dough with the dough hooks of the hand mixer. Cover and leave to rise in a warm place for about 30 minutes. In the meantime, roughly chop the plums and dice the marzipan. Knead marzipan and icing sugar, fold in plums.

    Form into a roll (approx. 90 cm long). Roll out the yeast dough into a rectangle (100 x 18 cm) on a lightly floured work surface. Place a marzipan roll on top. Roll up the dough from the long side and form into a pretzel. Place on a baking tray lined with baking paper. Whisk the egg yolk and cream, spread the pretzel with it and sprinkle with sugar crystals. Bake in the preheated oven (electric cooker: 200 °C/ gas: level 3) for about 25 minutes
