Donuts with lemon icing

Ingredients

Servings: 12
  • 150 g Low-fat curd
  • 75 g Sugar
  • 6 TABLESPOONS Milk
  • 6 TABLESPOONS Oil
  • 7-10 Tbsp juice and peel of 1 untreated lemon
  • 1 pinch Salt
  • 300 g Flour
  • 1 package Baking Powder
  • 1 kg white frying fat
  • 50 g flaked almonds
  • 175 g Icing sugar
  • 7-10 Tbsp Flour

Directions

    Put the quark, sugar, milk, oil, lemon rind and salt in a mixing bowl and mix everything together. Mix flour and baking powder and stir half into the quark. Knead with the remaining flour to a smooth dough. Roll out on a lightly floured work surface 11/2 - 2 cm thick and cut out circles (approx. 7.5 cm Ø). Cut out small holes from the middle with a small cookie cutter (2.5 cm Ø). Knead the rest of the dough together again, roll out and cut out more donuts (approx. 12 in total) until the dough is used up.

    In the meantime heat the frying fat in a pan and bake the donuts in portions for 1-2 minutes until golden brown. Drain on kitchen paper. Roast the almonds in a dry pan and let them cool down. Mix 3-4 tablespoons lemon juice and icing sugar to a smooth glaze. Coat donuts with icing, sprinkle almond flakes on top immediately and let dry. Results in about 12 pieces
