Peel the carrots and cut them diagonally into thin slices. Onions peel and cut into slices. Fry carrots and onions in hot oil. Season with garam masala, coriander and salt.
Add grated coconut and mix well. Add 3/8 litres of water and lemon juice. Cook for about 10 minutes. Pluck the coriander leaves from the stalks and mix into the vegetables
