Ingredients

  • 1 collar Sage
  • 7-10 Tbsp Salt
  • 100 g Flour
  • 3 TABLESPOONS Mineral water
  • 500 ml oil for frying

Directions

    Wash sage, dab dry, pluck leaves from the coarse stems. Put 1/8 litre of very cold water into a bowl. Stir in salt and 80 g flour with a fork. Add mineral water and mix.

    Heat the oil in a pot. Turn sage leaves in 20 g flour, shake off and pull through the dough. Fry sage leaves immediately in hot fat, turning them after about 30 seconds. When the leaves are tender brown, remove them from the oil and let them drip off on kitchen paper.

    Arrange fried sage leaves with olives as a snack.
