Cut bread into fine slices. Roast in a pan without fat for about 3 minutes, turning. Wash and quarter the tomatoes, peel and dice the onion. Clean, wash and finely dice the pepperoni.
Remove bread chips from the pan. Fry sausage without fat at medium heat while turning for about 6 minutes, remove sausage from pan and keep warm. Stew onion and tomatoes in hot frying fat for about 3 minutes.
Dust with 1 teaspoon curry, add tomato paste. Add 5 tablespoons of water, stir until smooth and bring to the boil. Wash the thyme, shake dry, pluck leaves from the stalks and add to the sauce.
Cut the sausage into slices and arrange in a bowl with the sauce. Sprinkle with remaining curry. Add bread chips.
