Cucumber sandwiches

Ingredients

Servings: 12
  • 2 Cucumbers (approx. 500 g each)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 100 g soft butter
  • 75 g liquid honey
  • 300 g Cheddar cheese (e.g. lighter)
  • 12 discs Sandwich bread (with wholemeal)
  • 4 Stem(s) flat leaf parsley

Directions

    Clean and peel the cucumbers, cut them in half lengthwise and remove the seeds. Cut cucumbers into thin slices and mix with 1 teaspoon salt and a little pepper. Leave to stand for about 20 minutes. Drain cucumbers well and squeeze out a little.

    Mix butter and honey. Coarsely grate the cheese. Remove the crusts from the bread slices and spread a thin layer of honey butter on them. Spread cucumber and cheese on 6 slices of bread. Place the remaining slices on top and press down lightly.

    Cut sandwiches in half diagonally. Wash parsley and chop finely. Sprinkle over the sandwiches.
