Ingredients

  • 300 g Flour
  • 1 package (100 g) crushed almonds
  • 1 cube (42 g) Yeast
  • 1/8 l Milk
  • 75 g Sugar
  • 80 g Butter or margarine
  • 1 pinch Salt
  • 1 Egg
  • 4 drops of "bitter almond" baking oil
  • 7-10 Tbsp Flour
  • 1 kg white cooking fat
  • 50 g Icing sugar

Directions

    Mix flour and almonds in a bowl. Press a hollow in the middle and crumble the yeast into it. Warm up the milk a little. Add 4 tablespoons of milk and 1 teaspoon of sugar to the yeast and mix everything with some flour. Cover with a cloth and leave to rise in a warm place for about 15 minutes.

    Melt the fat in the remaining milk. Stir in the remaining sugar, salt, egg and almond flavour. Pour the liquid into the lightly stirred yeast pre-dough and work everything into a smooth dough with the dough hooks of the hand mixer. Cover the dough again and let it rise in a warm place for 20-30 minutes. Lightly dust a work surface with flour and roll out the yeast dough on top of it to a thickness of about 1 cm. Use two cookie cutters (approx. 7 and 2 cm Ø) to cut out rings from the dough. Heat the cooking fat in a deep fryer to 175 ° C. Add the yeast rings in portions to the hot fat and bake until golden brown. Drain the yeast rings well and dust with icing sugar.
