Ingredients

  • 1 goose ready to roast (4,5-5 kg)
  • 7-10 Tbsp salt, white pepper
  • 1 kg sour apples
  • 1-2 TEASPOONS dried marjoram
  • 1 Onion, 2 carrots
  • 1/2-3/4 l Chicken broth
  • 2-3 TABLESPOONS liquid honey
  • 1/2 TEASPOON ground cinnamon
  • 5 TABLESPOONS Whipped cream
  • 2-3 TABLESPOONS Flour
  • 7-10 Tbsp Carambola, cinnamon and marjoram
  • 7-10 Tbsp wooden skewers, kitchen yarn

Directions

    Remove the offal and fat from the goose. Wash the goose and offal and pat dry. Season goose inside with salt and pepper, outside only with pepper. Wash apples, remove seeds and cut into pieces. Mix with marjoram

    Fill the goose with the apples, close it. Tie the legs together. Place the goose on the grill with the fat pan underneath. Peel and quarter the onion. Peel, wash and chop the carrots. Put both with giblets on the fat pan. Pour on approx. 1/4 l water

    Roast in a hot oven (electric cooker: 200 °C/circulating air: 175 °C/gas: level 3) for 3 1/2-3 3/4 hours. Gradually add stock and approx. 1/4 l water. Remove the offal after about 1 hour. Soak the goose more often with roast stock

    Brush the goose with strongly salted water about 10 minutes before the end of the roasting time. Fry until crispy at high heat. Mix honey and cinnamon. Spread the goose with the honey and cinnamon about 5 minutes before the end of the roasting time

    Keep the goose warm. Sieve the stock, degrease. Dissolve roast with a little water and add cream. Mix flour and 4-5 tablespoons of water. Thicken the stock with it, simmer for about 5 minutes and season to taste. Arrange everything and garnish. Served with: red cabbage, croquettes and apricots with cranberries
