Crispy chicken with broccoli

Ingredients

Servings: 1
  • 150 g Potatoes (e.g. Red Bliss)
  • 1 1/2 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 Egg yolk (size M)
  • 3 TABLESPOONS Milk
  • 1 (approx. 150 g) small chicken breast
  • 1 TABLESPOON Flour
  • 1-2 TABLESPOONS Breadcrumbs
  • 200 g Broccoli
  • 1/2 red and yellow pepper
  • 2 stem(s) Parsley

Directions

    Wash the potatoes thoroughly and quarter them. Heat 1/2 tbsp. oil in a small pan. Cover the potatoes and stir-fry them for about 10 minutes, then open and brown for about 5 minutes and season with salt and pepper.

    Whisk the egg yolks and milk, season with salt and pepper. Wash the meat, dab dry, first in flour, then in egg mixture and then in breadcrumbs and press on a little. Heat 1 tablespoon of oil in a frying pan. Fry the meat for 7-9 minutes, turning it over

    Clean and wash the broccoli and cut it into florets. Steam broccoli in a little boiling water for 7-8 minutes

    Clean, wash and cut the peppers into strips, steam with the broccoli for 3-5 minutes, season with salt and pepper. Wash the parsley, dab dry. Peel and chop the leaves. Arrange potatoes, broccoli and meat, sprinkle with parsley
