Defrost the raspberries. Mix curd and yoghurt. Sweeten with sugar to taste
Put almost 3/4 of the raspberries in a sieve and pass through with a spoon. Mix raspberry puree with vanilla sugar
Fold the raspberry puree into the quark and serve in portions with the rest of the raspberries. Sprinkle with chocolate shavings. Decorate with lemon balm if desired
