Clean and wash mushrooms and shiitake. Cut the mushrooms into slices. Heat the fat in a pot and fry the mushrooms for about 5 minutes. Season with salt and pepper. Dust with flour.
Add stock and cream while stirring constantly and bring to the boil. Season to taste with salt and pepper. Wash the chives, dab dry and cut into small rolls. Add to the soup except for a little garnish.
Arrange the soup on two plates. Sprinkle with chive rolls and coloured pepper. Garnish with chives or garlic flowers as desired.
