Cranberry tortilla bites

Ingredients

Servings: 3
  • 4 Potatoes, mainly waxy
  • 1 Onion
  • 3 TABLESPOONS Olive oil
  • 1 Courgette
  • 1/2 bunch Thyme
  • 7-10 Tbsp salt, cayenne pepper
  • 80 g dried cranberries
  • 6 Eggs (L)

Directions

    Peel and rinse the potatoes and cut them into very thin slices. Peel onion and cut into rings. Heat olive oil in a coated pan. Fry the potatoes and onion briefly.

    Rinse, clean and slice the zucchini. Rinse off the thyme and scrape the leaves off the stalks. Mix zucchini and thyme into the potatoes. Season with salt and pepper. Add cranberries.

    Whisk eggs with salt and pepper and pour over the potato and courgette mixture. Fry from the bottom until golden brown. Then place the pan in the preheated oven at 175 degrees (gas: level 2-3, fan oven: 160 degrees) and let the eggs set for about 15 minutes.

    Turn the tortilla onto a board and cut it into bite-sized pieces.
