Cranberry groats with vanilla sauce

Ingredients

Servings: 4
  • 2 sour apples
  • 500 ml Cranberry nectar
  • 1/2 Vanilla pod
  • 1 stick of cinnamon
  • 50 g Sugar
  • 40 g Cornstarch
  • 80 g dried cranberries

Directions

    Rinse, quarter, core, peel and cut apples into pieces. Put the cranberry nectar in a pot. Add apple pieces. Cut the vanilla pod lengthwise, scrape out the pulp and put it together with the pod into the pot.

    Add cinnamon and sugar. Bring to the boil slowly and simmer quietly for 4-6 minutes. Whisk starch with a little cold water and stir into the juice. Add cranberries and bring to the boil once while stirring.

    Let the cranberry groats cool down.

    Take 100 ml of the milk and mix with the starch. Pour the remaining milk into a pot. Cut the vanilla pod open lengthwise, scrape out the pulp and add to the milk together with the pod.

    Let the milk simmer quietly for 3-5 minutes. Remove the pod. Stir sugar and mixed starch into the milk and bring to the boil while stirring. Whisk the egg yolks with some vanilla sauce and stir into the vanilla sauce with a whisk.

    Let it cool down.

    Arrange the cranberry groats together with the vanilla sauce.
