For the dough, put flour, sugar, vanillin sugar, salt, lemon zest, egg and butter in flakes in a mixing bowl. Knead with the dough hook of the hand mixer. Then work into a smooth dough with floured hands. Cover the dough and chill for about 30 minutes. Roll out the dough on a floured work surface and cut out various animals (e.g. lions, elephants, giraffes and camels).
Place on three baking trays lined with baking paper. Bake the trays one after the other in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 10 minutes. Remove carefully from the baking tray and let it cool down on a cake rack. Pass icing sugar through a sieve and mix with lemon juice to a smooth glaze. Colour with colourful food colouring.
