Ingredients

  • 250 ml Milk
  • 75 g Butter or margarine
  • 500 g Flour
  • 1 (7 g) bag of dry yeast
  • 1 pinch Salt
  • 50 g Sugar
  • 3 Eggs (size M)
  • 2 TABLESPOONS Whipped cream
  • 200 g Icing sugar
  • 1-2 TABLESPOONS Lemon juice
  • 7-10 Tbsp red, blue and green food coloring, sugar writing and gold beads
  • 7-10 Tbsp Flour
  • baking paper

Directions

    Melt the fat in a small pot and heat the milk in it. Put flour, yeast, salt and sugar in a mixing bowl and mix. Add 2 eggs and lukewarm milk-fat mixture and knead to a smooth dough with the dough hooks of the hand mixer. Cover and leave to rise in a warm place for about 40 minutes. Then knead the dough again well with floured hands. Halve the dough.

    Divide dough halves into three. Shape one third to form a torso. Place the body on a baking tray lined with baking paper and press it flat a little. Shape the second part oval to a head, place it on the torso and cut a good half of the dough and shape it into ears. Form legs and arms from the remaining third of the dough. Place them against the torso. Let it rise again for about 20 minutes. Process the second half of the dough in the same way. Separate 1 egg. Put the egg white in a cool place. Whisk egg yolk and cream. Brush the cooked rabbits with the mixture and bake them one after the other in a preheated oven (electric range: 175 °C/ convection oven: 150 °C/ gas: level 2) for 20-30 minutes.

    Let it rise again for about 20 minutes. Process the second half of the dough in the same way. Separate 1 egg. Put the egg white in a cool place. Whisk egg yolk and cream. Brush the cooked rabbits with the mixture and bake them one after the other in a preheated oven (electric range: 175 °C/ convection oven: 150 °C/ gas: level 2) for 20-30 minutes. Remove from the oven and let it cool down on a grid. Mix icing sugar, egg white and lemon juice with the whisk of the hand mixer. Colour the icing as desired with red, blue and green food colouring. Decorate rabbits with it. Decorate additionally with sugar writing and gold beads as desired. Let the icing dry
