Ingredients

Servings: 7
  • 2 Shallots
  • 1 Garlic clove
  • 1 TABLESPOON Oil
  • 1/8 l Meat broth (instant)
  • 150 g Fresh cream
  • 4 TABLESPOONS Cognac
  • 1 TABLESPOON dark sauce thickener
  • 2 TABLESPOONS pickled green peppercorns
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Sugar

Directions

    Peel and finely dice the shallots and garlic. Heat the oil in a pot. Sauté shallots and garlic in it. Add stock and crème fraîche, bring to the boil and simmer for about 5 minutes.

    Pour the cognac. Stir in sauce thickener and bring to the boil again. Add peppercorns and season with salt and sugar.
