Prepare the pasta in boiling salted water according to the instructions on the packet, then drain. Peel the shallots. Peel garlic and press it through a garlic press. Wash the thyme and remove the leaves from the stalks. Clean and wash the tomatoes. Melt the sugar in a pan until golden brown.
Deglaze with red wine vinegar and 100 ml water. Cook the shallots in it for about 5 minutes at high heat. Season with salt, pepper, garlic and thyme. Swirl the tomatoes briefly in it. Pour it over the noodles while still hot. Leave to stand and season if necessary.
