Cod fillets au gratin with strawberry crust

Ingredients

  • 250 g Strawberries
  • 1 TABLESPOON Balsamic Vinegar
  • 3 Cod fillets (approx. 150 g each)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 3 TSP Breadcrumbs
  • 100 ml White wine
  • 1 untreated lemon
  • 1 red and green chili pepper
  • 1/2 bunch Coriander
  • 1/2 Baguette
  • 3 Garlic cloves
  • 60 g Olive oil
  • 7-10 Tbsp Lemon slices and coriander

Directions

    Wash and clean the strawberries and cut into small cubes. Drizzle with vinegar. Wash cod fillets, dab dry and season with salt and pepper. Cover with strawberries and sprinkle with breadcrumbs. Put the cod fillets in an ovenproof dish.

    Pour on white wine and 100 ml water. Wash the lemon, rub dry and peel off thin strips with a julienne chaff. Clean the chilli pepper, cut lengthwise, remove seeds, wash and cut into rings. Wash the coriander, dab dry and pluck the leaves from the stalks. Spread lemon strips, chilli rings and coriander leaves around the cod fillets and cook in the preheated oven (electric range: 200 °C/ gas: level 3) for about 15 minutes. Cut the baguette into slices and roast it under the hot grill on each side for about 1 minute. Peel garlic and chop finely. Heat oil in a pan and sauté garlic in it. Sprinkle the garlic oil on the baguette slices.
