Cock-a-Leekie (chicken soup with leek)

Ingredients

Servings: 6
  • 1 ready-to-cook chicken (approx. 1.4 kg)
  • 1/2 bunch Parsley
  • 4 Stem(s) Thyme
  • 2 Bay leaves
  • 3 discs Bacon
  • 7-10 Tbsp salt, white pepper
  • 2 kg Leeks (leek)
  • 100 g dried. semi-soft plums without stone

Directions

    Wash the chicken, parsley and thyme. Put everything with bay leaf, bacon and about 2 teaspoons of salt in a large pot. Pour about 3 litres of water on it until the chicken is completely covered. Bring to the boil and simmer open for about 1 1/2 hours. Skim off the foam that develops during this process

    Clean the leek and wash it well. Cut about 1/3 into pieces. After approx. 30 minutes cooking time add to the chicken and simmer. Finely dice the remaining leek

    Remove the chicken and let it cool down a little. Sieve broth and bring to the boil. Simmer covered leek cubes and plums for about 15 minutes. Season with salt and pepper. Remove meat from skin and bone and cut into bite-sized pieces. Heat briefly in the soup. Serve everything
