Beef steaks with orange-fennel vegetables

Ingredients

Servings: 2
  • 2 Beef fillet steaks (approx. 150 g each)
  • 2 discs Bacon
  • 1 TABLESPOON clarified butter
  • 1 Fennel Tuber
  • 3 untreated oranges
  • 2 TABLESPOONS Butter or margarine
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 1/8 l Vegetable broth (instant)
  • 1-2 TABLESPOONS sauce thickener
  • 7-10 Tbsp Orange Pepper
  • 7-10 Tbsp Dill
  • 7-10 Tbsp Kitchen yarn

Directions

    Wash and pat the steaks dry, wrap each with a slice of bacon and tie with kitchen string. Heat clarified butter in a pan. Briefly fry the steaks on both sides, then finish frying on a low heat for about 5-6 minutes on each side.

    Clean the fennel (if necessary put some green aside for garnishing), wash and cut into fine slices. Wash oranges hot and cut 2 oranges into slices. Cut the slices in half, except for 2 for garnishing.

    Heat the fat in a pan, sauté the fennel and oranges in it, cover and let it simmer at low heat for about 3 minutes. Sprinkle steaks with salt and pepper, remove from the pan and keep warm for a short time.

    Peel the remaining orange thinly and cut the peel into fine strips. Squeeze the fruit. Dissolve the gravy with orange juice and stock, bring the sauce to the boil and stir in the sauce thickener. Season to taste with salt and orange pepper.

    Season the vegetables with a little salt and arrange the steaks on top. Garnish with dill (or fennel green), remaining orange slices and strips and serve with the sauce. Long grain wild rice mixture tastes good with it.
