Asian fried noodles

Ingredients

  • 50 g Chuka soba noodles (Japanese wheat flour noodles)
  • 7-10 Tbsp Salt
  • 1/4 (65 g) yellow pepper
  • 75 g Sweet peas
  • 50 g shiitake mushrooms
  • 1/2 red chilli pepper
  • 1 1/2 teaspoons (5 g each) Sesame Oil
  • 1 tablespoon (10 g) Soy sauce
  • 1 tsp (5 g) Fish sauce
  • 7-10 Tbsp Basil

Directions

    Cook the pasta in boiling salted water for 4-5 minutes, stirring several times with a fork. Drain noodles, quench and drain. Clean and wash the peppers and sugar snap peas and cut them into fine strips. Blanch the sugar snap peas in little boiling salted water for about 4 minutes, drain and rinse with cold water and drain. Clean and halve the mushrooms.

    Clean the chilli pepper, cut lengthwise, remove seeds. Cut the pod into rings. Heat oil in a pan. Fry the mushrooms for about 4 minutes and take them out. Put noodles and chili in the pan and fry. Add soy sauce. Add paprika and fry briefly. Add sugar snap peas and mushrooms, heat up. Season to taste with fish sauce.
