Bake Rösti corners on a baking tray in a preheated oven (electric range: 200 °C/ gas: level 3) for approx. 20 minutes. Turn over after 10 minutes. In the meantime, wash the meat, dab dry and cut into fine slices.
Clean and wash spring onions and cut them into bite-sized pieces. Heat clarified butter in a pan. Sauté the meat in it in portions. Season with salt and pepper. Remove and put aside.
Add spring onions to the frying fat. Sauté briefly. Deglaze with cream and cook for about 2 minutes. Coarsely chop the blue cheese and stir it into the cream until it has dissolved. As soon as the cream thickens slightly, fold in the meat and the rinsed cold peppercorns.
Let it sit for a while. Season salad again. Arrange everything and garnish with chervil leaves if necessary.
