Ingredients

  • 1 Head Red cabbage (about 1 kg)
  • 2 Onions
  • 2 TABLESPOONS clarified butter
  • 4–5 Bay leaves
  • 1 TEASPOON Juniper berries
  • 8–10 Cloves
  • 2 Cinnamon sticks
  • 250 ml Red wine
  • 250 ml apple juice
  • 6-10 Tbsp Cider vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Sugar
  • 3 Apples

    Clean the red cabbage, quarter it and cut out the stalk. Cut the cabbage into fine strips. Peel onions and cut them into strips. Heat clarified butter in a large pot, fry onions for 4-5 minutes until transparent. Add red cabbage, laurel, juniper berries, cloves, cinnamon, red wine and apple juice. Season with vinegar, salt and sugar. Bring to the boil and simmer for 50-60 minutes

    Peel and quarter apples, remove core. Dice apple quarters and add to the red cabbage about 15 minutes before the end of the cooking time. If necessary, season again with vinegar, salt and sugar, pour into a bowl and serve immediately
