Peel oranges and grapefruit so that the white skin is completely removed. Cut out the fillets with a knife between the parting skins. Squeeze juice from the rest of the citrus fruits.
Wash and clean the lamb's lettuce. Pluck the chicory leaves from the stalk, if necessary cut a little smaller. Wash turkey meat, dab dry and cut into strips. Fry in hot fat until golden brown. Season with salt and pepper.
Carefully mix the prepared ingredients and arrange in portions. For the vinaigrette, mix 4 tablespoons of citrus fruit juice, vinegar, salt, pepper and sugar. Whip the oil into the vinaigrette. Spread on the salad.
Chop the walnuts and sprinkle over them. Serve garnished with orange slices as desired.
