Wash and quarter the apples and remove the core. Cut the apple quarters into slices. Mix apple slices, lemon juice, cinnamon and honey, let it stand for about 10 minutes.
Divide the apple slices into 4 greased, ovenproof moulds (each approx. 12 cm Ø). Spread raspberries on top. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) for about 20 minutes.
Break cookies into small pieces. Remove the ramekins from the oven. Spread the cookie crumbs over them. Serve with vanilla sauce.
