Cinnamon apple in white chocolate sauce

Ingredients

Servings: 4
  • 3-4 Tbsp Sugar
  • 40 g flaked almonds
  • 7-10 Tbsp Oil
  • 3 (approx. 500 g) Apples
  • 2 TABLESPOONS Lemon juice
  • 200 ml apple juice
  • 1 knife tip Cinnamon
  • 100 g white chocolate
  • 5 TABLESPOONS Whipped cream
  • 25 g semi-bitter couverture
  • 7-10 Tbsp Mint
  • 7-10 Tbsp Aluminium foil

Directions

    Caramelise 2-3 tablespoons of sugar until golden brown. Almonds

    add and fold in. Spread on a lightly oiled piece of aluminium foil. Cooling down

    Wash, quarter and core the apples. Cut quarters into slices. Sprinkle with lemon juice.

    Heat apple juice, 1 tablespoon sugar and cinnamon. Steam apple slices for about 3 minutes. Drain

    Break white chocolate into pieces. Heat the cream. Melt the chocolate in it while stirring over low heat. Melt dark chocolate in a hot water bath

    Pour white chocolate sauce onto plates. Pour the chocolate coating on top of it and draw it through with a wooden stick. Arrange apple slices on top. Break the brittle into pieces and sprinkle on top. Decorate with mint if desired.

    Put small quantities of couverture in a freezer bag and melt in hot water
