Christmas apple red cabbage

Ingredients

Servings: 6
  • 1 Red cabbage (approx. 1 kg)
  • 2 Onions
  • 2 TABLESPOONS clarified butter
  • 1 Bay leaf
  • 1 Cinnamon stick
  • 200 ml Red wine
  • 6 TABLESPOONS Cider vinegar
  • 3 TABLESPOONS Sugar
  • 7-10 Tbsp Salt
  • 2 sour apples
  • 3-4 Tbsp Currant Jelly

Directions

    Wash the cabbage, quarter it and cut out the stalk. Chop or slice the cabbage into fine strips. Peel and halve onions and cut them into fine strips.

    Heat the lard in a large pot. Fry the onions in it. Stir in cabbage and spices. Stir in wine, vinegar, sugar and about 1 teaspoon salt. Bring to the boil, cover and stew for about 1 hour. Stir from time to time.

    Possibly pour on some water so that nothing burns.

    Peel apples, quarter them, remove seeds, dice them finely and after about 15 minutes add them to the red cabbage. Stir in jelly. Season cabbage with vinegar and sugar.
