Chocolate pudding with pear compote

Ingredients

  • 440 ml + 6 tablespoons of milk
  • 1 package Chocolate Flavoured Pudding Powder
  • 40 g + 2 tablespoons sugar
  • 4 Pears (about 150 g each)
  • 7-10 Tbsp Juice of 1 lemon
  • 50 g Raisins
  • 1 Vanilla pod
  • 50 g Whipped cream
  • 4 TABLESPOONS Egg liqueur
  • 7-10 Tbsp Cling film

Directions

    Bring 440 ml milk to the boil. Stir pudding powder, 40 g sugar and 6 tablespoons milk until smooth. Stir the mixed powder into the boiling milk and boil for about 1 minute while stirring. Rinse the pudding mould (160 ml content) with cold water and fill in the pudding. Place foil directly on the surface of the pudding and chill for at least 4 hours.

    Peel and quarter the pears and remove the core. Cut each quarter in half again and sprinkle with lemon juice. Wash the raisins and dab dry. Caramelise 2 tablespoons of sugar in a saucepan. Cut the vanilla pod in half lengthwise and scrape out the pulp with the back of a knife. Add pear pieces, vanilla pulp and raisins to the caramel and simmer for 5-6 minutes. Add vanilla pulp and raisins as well. Pour the compote into a bowl, cover with cling film and chill for about 1 hour. Carefully turn the pudding out of the moulds onto 4 small plates.
