Chocolate sponge cake roll with peaches

Ingredients

  • 4 Eggs (size M)
  • 75 g Sugar
  • 1 package Vanillin sugar
  • 2 Egg yolk (size M)
  • 120 g Flour
  • 1 knife tip Baking Powder
  • 20-25 g Cocoa powder
  • baking paper
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp For the filling and for
  • 5 sheets white gelatine
  • 1 can(s) (850 ml) Peaches
  • 3 TABLESPOONS Peach liqueur
  • 7-10 Tbsp 500 g
  • 7-10 Tbsp Whipped cream
  • 1 go. tablespoons of sugar
  • 4 Chocolate wafer leaves (whole milk)
  • 1/2 TEASPOON Cocoa powder

Directions

    Separate eggs, beat egg whites and 1 tablespoon of water until stiff. Embezzle sugar and vanillin sugar. Then stir in the egg yolks bit by bit. Mix flour, baking powder and cocoa and sieve onto the egg mixture.

    Loosely fold in and spread on a baking tray lined with baking paper. Bake in a preheated oven (electric: 200°C/ gas: level 3) for 9-10 minutes. Turn onto a tea towel sprinkled with sugar and remove the baking paper.

    Cover with a damp tea towel and let it cool down. Soak gelatine in cold water. Drain the peaches on a sieve and collect the juice. Remove half the peaches and puree them in 150 ml peach juice.

    Cut 10-12 thin slices from the remaining peaches for decoration. Dice the rest. Squeeze out the gelatine, dissolve, mix with peach liqueur and stir into the peach puree. Put it in a cold place. In the meantime, whip 100 g cream until stiff.

    When the peach puree begins to gel, fold in the cream and peach cubes and spread on the sponge roll. Roll up and put in a cool place for about 1 hour. Whip remaining cream and sugar until stiff.

    Coat the roll with 2/3 of the cream. Put the rest of the cream in a piping bag with a star-shaped spout and decorate the roll with tuffs. Quarter chocolate wafer biscuits and decorate each tuff with a biscuit corner and a peach wedge.

    Dust the sides with cocoa before serving. Results in about 16 slices.
